First, I’ve got a ton of stuff to get done this afternoon, so no pre-orders, please.

Things have been growing quickly in the gardens this last week! The Swiss chard has exploded with growth. There are five bags ready for tomorrow morning. OK, so I know most of you read that and made a face or thought “Nope”. Please give it a chance. I am a good vegetable grower but not a good vegetable eater, and I like chard! It has a thicker, crispy leaf that is perfect for making wraps (my favorite is chicken salad). There are three bags that have larger leaves that would be perfect for wraps (marked with L on the bag). Chard is great for using as a crisp/not sliding green on sandwiches or a burger, and you can make it as a salad or sauteed green just like spinach. The stems are thick and earthy when raw, so if you saute chard, slice the stems thinly and cook them for a few minutes before adding the greens to the pan and remember to add your favorite acid (lemon juice, lime juice, balsamic vinegar) at the end. A little fresh Parmesan cheese never disappoints either.

Do you want broccoli greens? They taste just like broccoli and have more nutrition than the flower heads. If you’d like some to saute, blanch and use in veggie lasagna, or to tear into a salad – let me know and I’ll pick a bag for you.

There is lettuce, and one bag was a smidge short, so there are 3 very small leaves of chard added. This bag is marked “mixed”. There are 4 full bags of lettuce and a bag and a half of kale, too. Great greens this morning!

New Granola Alert: Strawberry! I took freeze dried strawberries and ground them in the food processor and stirred the strawberry powder into the dry ingredients so every bite has a light coating of strawberries. This one has pecans and sliced almonds in addition to the rolled oats. For sweeteners, it has real maple syrup and homemade applesauce. Add in a splash of vanilla and a tiny bit of sea salt and I think it’s a winner! There is also more of the maple applesauce variety.

Today’s baking will be 16 mini coffee cakes – half will be brown sugar & cinnamon and the other half will have plum jam as the filling layer.
