It happens every year, but it still feels immeasurably better to have more daylight. Even better than that, we’ve been seeing sunny days! Some time has been spent picking up sticks and dried plant material that is blowing around. Things related to growing and planting are coming along. Spreadsheets for seeds and plants are made and the final details have been rattling around in my head for a week or more. Most of the details have fallen into place and just need to be put in the sheets.

To be honest, there has been some boredom over here with bitter days, clouds, and not much to do other than clean (which is the last thing I want to do). Are you interested in any baked goods? Jams? Chai latte? Scrubs? Pillow sprays? Lotion bars? Rollerballs? Something else??

As you can see, there are several new recipes that were tested this winter. The vegan options use Zulka raw sugar, maple syrup, and applesauce as the primary sweeteners and many use coconut or olive oil as a liquid and source of tenderness. The almond shortbread cookies are made with almond flour, coconut oil, maple syrup, vanilla and topped with raw sugar infused with lemon zest. These are so good! Not a low calorie food, but packed with flavor and a decent amount of protein per cookie.

As always, we hope that you and your family are well and enjoying some sunshiny days! If you ever want something, please reach out and I’ll be happy to help. And, if you have empty jars, let me know! Here’s to some great days before spring actually gets here!
