The week is winding down, but the gardens are just getting into the swing of summer! Let’s have farmstand Saturday morning, and hope that we sell out before noon’s high heat index arrives.

Anything new? Yes! Peas will be making their debut Saturday morning! There are hundreds of tiny cucumbers on the trellis with some that will be ready early next week. Beets, particularly, Babybeats beets, are maturing and have beautiful greens. We will see more kale and Swiss chard, and soon some baby carrots. To all you green bean lovers: the plants are loaded with thousands of yarn-sized beans! And, we added a row of wax (yellow) beans, too. Tomatoes are setting fruits and they’re filling out. The early tomatoes are actually starting to turn from dark green to whitish and should be showing red within the next two weeks.

Anything on the way out? Sure. The high heat has been tough on lettuce and spinach, but I’m still holding out hope that those transplants will mature and give us a few bigger harvests. If not, the broccoli and mini broccoli transplants are at the ready. Radishes will probably be available just another week or so.

Have I been baking? YES! I’ve finally worked on focaccia bread from a recipe that has been in my “to make” stack for a long time. The verdict is that it’s beautiful and delicious! There are 5 square breads (out of a 9×9 pan) with Italian seasoning and Parmesan cheese for this Saturday. These flat breads can be frozen and thawed easily, so my goal is to make a few varieties and stash them in the freezer. How do you like focaccia? We like it cut into sandwich size, sliced open and griddled on the cut sides in a little butter for sandwiches. Think chicken salad, BLT (no raw tomato for me, so we make a seasoned tomato sauce) or as an open-faced/flatbread quick pizza. You can also cut these into short bread sticks and heat for dipping or to accompany your meal. So many options!
